Celebrating five years of powering the Vikings Table food truck

Xcel Energy is proud to help combat food insecurity in the Greater Twin Cities area


For the past five years, Xcel Energy has partnered with the Minnesota Vikings Foundation to power the Vikings Table food truck, a self-sustaining food truck model designed to serve healthy meals and provide nutrition education to youth across the Greater Twin Cities area. To celebrate reaching the five-year milestone on June 13, Xcel Energy employees recently teamed up with Hall of Fame Vikings Legend John Randle to pack 1,000 drawstring bags for neighboring community members. 

 

"We're thrilled to have a great partner like Xcel Energy powering the Minnesota Vikings Foundation Vikings Table food truck," said Minnesota Vikings Foundation executive director Brett Taber. "Xcel Energy makes it possible for us to have the resources we need to go and support the community by giving back to the individuals and youth in our community that truly need these nutritious meals and nutrition education the most."

 

   

 

When the truck first launched in 2019, Xcel Energy committed $1.275 million over five years to the Vikings Table, a 38-foot, custom-built Winnebago donated by the recreational vehicle company. The food truck, a zero-waste vehicle, is fitted with Energy Star appliances and rooftop solar panels. The rear also features an experience room with an 80-inch monitor for displaying educational videos and nutritional information.  

 

Since 2019, Vikings Table has distributed more than 65,000 free meals to youth and families in need, while serving over 20 community partners. You can learn more about the food truck’s impact by visiting the Minnesota Vikings website.
 

 

 

Xcel Energy regional vice president John Marshall expressed pride in the impact the food truck has delivered, emphasizing the company's commitment to serving the community and its customers.  

 

"At the end of the day, Xcel Energy truly is about the communities that we serve. It's about our customers and our businesses; it's about the residential customers that we have, our families," Marshall continued. "Our customers rely on us 24 hours a day, 365 days a year, for the energy they need for their lives and their livelihoods. .. . Vikings Table is a really important opportunity to continue [those] relationships."
